A lot of cops feel like speeding tickets are a form of fishing.  They dont expect to catch all wrong doers but rather to meet their quota for the time frame.  If your the unlucky one to be caught at that time the first thing to do is be as informed about the entire situation as you can.  If signs are involved double check everything including times and conditions.  In some cases merely showing up for the court date is enough to throw out the ticket, If the judge sees you show up and the ticketing officer doesnt; the ticket wont have much ground.  Cities with more stringent laws may require more.  Most people who try to fight a speeding ticket find that when they go to court they are one of many in the room.  Usually the first appearance is to set guilty or not guilty.  Something most people dont know is that between the time of your first appearance and the next one set when you choose not guilty (naturally if your going to fight the ticket in the first place), if you go talk to the judge you are appointed to he will throw out the ticket fine altogether or give you a much smaller court fine in place of it and no points on your license and no rise in insurance.
